The 165°F line in the two ready-to-eat columns has nothing to do with undercooked pork. It covers Listeria monocytogenes, which grows slowly even at refrigerator temperatures, and FSIS advises people at increased risk to reheat hot dogs and luncheon meats until steaming hot. Different hazard, same shelf at the store.
Where "boil 10 to 20 minutes" came from
Look at what the law puts in front of a shopper. Among the four required statements on that safe-handling panel, the cooking one reads, in full: "Cook thoroughly." Three syllables, no number.
The internet filled that gap. The 160°F figure lives in FSIS guidance and on the agency's temperature chart, never on the mandatory panel, so recipe writers reached for the nearest familiar number, which was hot dog logic: boiling water, ten to twenty minutes, done. It worked often enough that nobody audited it. A planning estimate got repeated until it read like a safety instruction, and the real instruction was a temperature all along.
Here is the strongest case against me, and it is fair. Commodity brats are dimensionally consistent. A retail pack of five links, four-to-a-pound foodservice packs, uniform 32 to 35 mm hog casings — feed that into a 20-minute simmer from the refrigerator and you will clear 160°F almost every time, with margin. The fixed minute count is not reckless for someone cooking one familiar brand on one familiar stove. It works inside the conditions it was built for.
It breaks at the edges, and the edges are where people cook. Twelve links in a crowded pot drop the liquid temperature far more than four. A butcher's brat in a 38 mm casing is a slower animal than a supermarket link. Frozen product behaves differently again, which is why Johnsonville's own directions open with "Thaw product prior to cooking" before any timing appears.
Simmer at 180°F, not a boil at 212°F
At sea level, a rolling boil is 212°F. A gentle simmer, measured with the same probe you use on the meat, sits around 180°F to 190°F with the surface barely moving. No federal standard defines a simmer; that range is what my thermometer reads in my own pot, and you should check it in yours.
Thirty degrees does not sound like much. Water and rendered fat inside the sausage expand faster as you push the exterior harder, and a rolling boil adds mechanical agitation, tumbling links against each other and the pan wall. Altitude changes the ceiling but not the target. Gray is not doneness, and 160°F is
This belief is worth breaking because it feels like evidence. You poach a brat, the casing goes from pink to gray, and the change looks like proof.
It is not. FSIS states plainly that doneness and safety cannot be judged by color, which is why the agency keeps pointing at a thermometer. USDA's Agricultural Research Service measured how wrong color can be: in gas-grill tests at Beltsville, ground beef cooked to 135°F and left to sit about four minutes looked the same as a burger cooked to 160°F. The failure runs both directions, which is why color is useless rather than merely conservative. Cured and smoked pork stays pink well past 160°F, because nitrite fixes the color chemically. Here is what I cannot personally vouch for. The premature-browning work I trust was done on beef patties, not on pork bratwurst in a casing, and I have never run a controlled test on brats with enough replicates to publish a number. Four things move the number. Diameter dominates, because a 38 mm butcher link is a longer trip to the middle than a 32 mm supermarket one. Starting temperature comes next; FSIS keeps refrigerators at 40°F or below, so a cold link and one that sat out during setup are not on the same clock. Pot load is third, since twelve cold sausages in four quarts pull the liquid well below simmer and hold it there. Method is fourth, which is why manufacturer directions look faster than mine. Johnsonville's stovetop method browns links about five minutes, adds half a cup of water, then covers and simmers twelve minutes to 160°F. A covered pan steams rather than poaches, and steam moves heat faster.

Resting gets confused with safety, so it is worth a line. USDA's temperature chart attaches a three-minute rest to beef, pork, veal, and lamb steaks, chops, and roasts at 145°F. The ground-meat line at 160°F carries no rest requirement. Letting brats sit two or three minutes is a quality decision about juices settling, and it does not license taking them off early.
Why you should not poke holes in the casing
Do not do it. Splits are real and annoying, but puncturing the casing treats a heat problem with a drainage solution.
Natural hog casing at the bratwurst caliber, 32 to 35 mm or roughly 1¼ to 1⅜ inches in supplier size charts, holds rendered fat and moisture against the meat while it cooks. Collagen casings are more uniform and give up some snap. Either way, every hole you make is an exit, and what leaves is fat.
